What kind of egt's do I want to be seeing before I shut my ctd off? assuming I have been running the truck hard, ie towing or just driving like an ass.

Not a CTD, but I don't shut mine off until it is down to at least 400*.

I have my edge set to 320* before it shuts down. Alot of people I know wait til it hits 300*.

sounds like I'll leave it set on 320. I figured it couldn't hurt and its not like were talking about burning a whole lot of fuel.
next question I have heard that it is good to run the exhaust brake once in a while because it will help keep the turbo from building up soot. Is this true?

If you shut down frequently while hot(400* +) the oil will cook in the turbo housing causing it to solidify (cokeing) in the passages restricting flow and screwing up the turbo bearings. This is especially important when towing and pulling into a fuel stop after pulling hard. Most of the time idling for a minute or so is enough to get to 350*- with my 03 CTD.

exhaust brake isn't gonna do much to help with soot, all that does is slow down the exhaust flow. getting it out on the highway and opening it up and getting it hot will have a better effect on cleaning the soot out than anything.
my truck does nothing but smoke when I run it (im talking huge clouds for 300ft or so) and then it idles to cool down and goes back on the trailer...and i have never had a turbine get clogged with soot or anything.
EDIT: on second thought what you might have been told is to use it to keep from soot building up on the butterfly valve in the brake itself, and that does make a little sense to make sure the valve is opening/closing properly, but again if you get it hot it will help to burn that soot out of the brake also
